A much healthier alternative to canned soup, and amazing on a cold day! <a href=\"http:\/\/heather-maclean.com\/wp-content\/uploads\/2013\/05\/stellasoup.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1205\" src=\"http:\/\/heather-maclean.com\/heathermacleancooks\/wp-content\/uploads\/2013\/05\/stellasoup.jpg\" alt=\"stellasoup\" width=\"580\" height=\"420\" \/><\/a><!--more--><\/p>\n<p><strong>Stella Pastina<\/strong><br \/>\n<em>Makes 4 servings<\/em><\/p>\n<p>Stella means \u201cstar\u201d in Italian, and pastina is \u201clittle pasta.\u201d I know you\u2019ve seen the tiny star pasta in the grocery store and loved it but wondered what to do with it. I\u2019ll tell you! This is a really easy, flexible dish. You can leave it wet and serve it as a soup, or drain the broth for a creamy pasta dish. Any shape of dried tiny pastina pasta is fine, but my kids like stars the best (sometimes labeled <em>stelline<\/em> in the store), and they cook the quickest. This is a great meal to make with leftover chicken, but you can add any other meat or vegetables that you have on hand.<\/p>\n<p>3 cups canned reduced-sodium chicken broth<br \/>\n1\/2 cup finely chopped carrot<br \/>\n1 cup star-shaped pastina<br \/>\n1 cup (1\/2-inch dice) cooked chicken<br \/>\n1\/3 cup shredded fresh mozzarella cheese (freeze the cheese for 1 hour to firm before grating)<br \/>\nFreshly grated Parmigiano-Reggiano cheese, for serving<\/p>\n<p>1. In a medium saucepan, bring the broth and carrot to a boil over medium heat.<\/p>\n<p>2. Add the pastina and cook until tender, about 6 minutes. During the last minute or so, add the chicken to heat it through.<\/p>\n<p>3. Remove from the heat and stir in the mozzarella.
